fermented stuff is at every bodega in manhattan now, not just health stores. if the founder's actually sourcing from family farms like the story goes, that scales.
fermented veg has the shelf space now but not the repeat. i've seen this build to $80M on trend alone, then flatten hard when the story shifts.
